Dark Delights
Dark chocolate. The king of the cocoa bean takes center stage in the world of sweet indulgence. The cocoa concentration can range from as little as 50% and climb high to a roaring 90%, delivering a rich and bitter luxury. The dark and rich chocolate can hide various flavors, from nutty and earthy touches to floral and semisweet hints. If you do not have a sweet tooth, the dark option is probably the best choice.
Magnificent Milk
Milk chocolate is what we call the silent majority. Most chocolate bars are produced with milk chocolate, making it a favorite worldwide. It is creamy, velvety, and, to our surprise, can come in various sweetnesses. The higher the concentration of milk or cream is, the sweeter the chocolate will be. So, if the dark varieties are too bitter and the milk choices are too sweet, look for something in between with a relatively high percentage of cocoa. We always go for chocolate-covered nuts or raisins, which are less sweet and more mature.

Winter White
White chocolate is, basically, chocolate without any cocoa. One of the key ingredients in white chocolate is cocoa butter, which gives it a creamy and irresistible texture. The white chocolate is considered to be very sweet. However, something about it makes it easier to take in, even if you don’t have a sweet tooth. White chocolate is featured in many desserts; it is a great companion in cheesecakes and a marvelous partner to strawberries, almonds, and, believe it not, lemons.
The Art of Making Chocolate
A cocoa bean has to travel a long way before becoming a chocolate bar. There are several steps in the process, such as roasting and grinding, which greatly impact the chocolate’s final flavor. Although chocolate these days is available to all and can be found at very low prices, years back, it was considered a luxury trat that only the privileged could enjoy.

Chocolate does not have to sit alone, and it has become a must on menus, and not only under the dessert section. Dark chocolate goes perfectly when suited with the right red wine; some milk varieties are great companions to lavender tea, and we haven’t even begun talking about the endless flavors of chocolate that 21st-century innovators are coming up with. Salted caramel, sea salt, and chilies are just the beginning.
